Veggie Curry & Wild Rice Soup

theyogimovement.com Curry and Wild Rice Veggie Soup Recipe by Monica Dawn Stone

I have lived in Florida for most of my life and I still have not gotten used to the “weather mood swings” we have here. The weather is so temperamental. The summer is so hot and humid, and it’s not the kind of hot that feels good. It’s the kind of heat where you dread going outside, and can’t wait to feel the cool breeze of the air conditioning.

It rarely ever gets cold here, but when it does, I get so excited. Even when there is a slight chill in the air, I do not hesitate to rock the boots, stockings, scarves, and maybe a cardigan. I just adore accessorizing and layering my outfits, and I have a slight obsession with stockings. Last year it got out of hand, and I had to purchase at least two pairs whenever I went shopping. Now I have two drawers full.

After I got back from my spiritual journey to Nepal, I made major changes in my life. I threw away or donated anything material that I had no use for, and just completely decluttered. I also stopped shopping so obsessively and started saving as well as putting my money to good use.

Of course, I am sure if it gets a little chilly, I might pick up a set of new stockings for old times sake. We’ll see though. Lately, whenever I go shopping, I end up returning everything.

Wait. This was a recipe post. Silly Vrittis.

Well, as we turn to the holidays, and the weather becomes gloomy and chilly, there is nothing better than some warm and comforting soup. Here’s a recipe that I’ve been experimenting with for awhile that involves wild rice, a red curry broth, and veggies. You can make it just how I explain, or you can add your own twist to it. Either way, It will still feel like a warm hug on a chilly day.

Red Curry Veggie and Wild Rice Soup

How did you make this soup? Did you change or add anything? What is your favorite soup on a chilly day?

If you liked this, please share or pin! If you think someone else might like it, please share or pin! Thank You!

Love,

Mon Mon 🙂
