Treats From My Foodie Pen Pal July 2014

Hello Friends!

I’ve been so excited about today because it’s Foodie Penpal reveal day! Foodie Penpals is a program that Lindsey at The Lean Green Bean set up. After you sign up, she matches you with someone. From there, you get in touch with your pen pal and discuss any allergies or food restrictions, and then send a package to that person.

This month I was matched with Lauren, who has an AMAZING food blog called, From Everyday to Gourmet.

When I first received the box, I had to laugh. She warned me there would be a lot of stamps because she was trying to get rid of them, but I didn’t know they would take up half of the box! You can see in the picture below the amazing packaging, the cute card, and she even typed up a personal letter describing what she sent me and why. I was her first vegan pen pal, so she mentioned she had some fun shopping for me. 
foodie pen palsI get so excited when my package of food arrives at my front door! I seriously drop everything I’m doing and open it up and dig in. The first thing I tried were the chips and salsa. This peach salsa was so delightful, and I just realized right now it would be great as a marinade or a sauce to mix in rice. I also just found these chips at my local grocery store, so I’m pretty psyched about that.

The next thing I got into were the crunchy cinnamon chickpeas, which made a perfect snack that lasted a few days. She also included Reeds Crystalized Ginger Nuggets. I didn’t get a picture of them, but attached a link right here if you want to see what they look like. I love ginger, so those went fast.

The last thing were these refried beans that I cooked up last night. I seasoned them with some red pepper flakes and a little bit of salt. They went great with  a side of rice and steamed veggies. I Still have some leftovers.
